Ingredients

Filling

  • ¼ cup dark brown sugar
  • ¼ cup melted butter
  • 2 large eggs
  • cup evaporated milk
  • 1 ½ teaspoons vanilla extract
  • 3 cups cooked sweet potatoes
  • ½ teaspoon ground cinnamon (optional)
  • Pinch coarse salt

Topping

  • 1 cup corn or bran flakes, crushed
  • ½ cup pecans, chopped
  • ¼ cup dark brown sugar
  • ¼ cup melted butter

Instructions

  1. Preheat the oven to 350°F and coat a baking dish with cooking spray.
  2. In a bowl, mix brown sugar, butter, eggs, milk, vanilla, sweet potatoes, cinnamon, and salt until smooth.
  3. Pour the mixture into the baking dish and bake for 20 minutes.
  4. In another bowl, combine corn flakes, pecans, brown sugar, and butter for the topping.
  5. Spread the topping over the sweet potato filling and bake for an additional 15-20 minutes until set.
  6. Allow to cool slightly before serving.
