Instructions
- Preheat the oven to 375°F.
- Grease a 9×13 baking dish to prevent sticking.
- Combine the mashed sweet potatoes, eggs, butter, vanilla, brown sugar or sweetener, cinnamon, nutmeg, and salt in a mixing bowl.
- Blend the ingredients using a hand mixer at medium speed or mix by hand.
- Pour the sweet potato mixture into the baking dish.
- Top with marshmallows, ensuring the casserole is fully covered.
- Bake for 20-25 minutes until the marshmallows are browned and gooey.
- Cool before serving.
