Ingredients

The sweet potato mixture

  • 2 ½ - 3 pounds sweet potatoes, cooked, mashed, and cooled
  • ½ cup brown sweetener or sugar, light
  • 2 eggs room temperature
  • 1 teaspoon vanilla
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt

The topping

  • 2 cups mini marshmallows

Instructions

  1. Preheat the oven to 375°F.
  2. Grease a 9×13 baking dish to prevent sticking.
  3. Combine the mashed sweet potatoes, eggs, butter, vanilla, brown sugar or sweetener, cinnamon, nutmeg, and salt in a mixing bowl.
  4. Blend the ingredients using a hand mixer at medium speed or mix by hand.
  5. Pour the sweet potato mixture into the baking dish.
  6. Top with marshmallows, ensuring the casserole is fully covered.
  7. Bake for 20-25 minutes until the marshmallows are browned and gooey.
  8. Cool before serving.
