Ingredients

The Casserole

  • 3 pounds sweet potatoes
  • ¼ cup milk
  • ¼ cup heavy cream
  • 2 large eggs
  • 4 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ½ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • to taste salt

The Topping

  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Wash the sweet potatoes, poke them with a fork, and wrap them in aluminum foil.
  3. Bake the sweet potatoes for about 50-60 minutes until fork-tender.
  4. Let the sweet potatoes cool, then peel and mash them in a large bowl.
  5. Mix in milk, heavy cream, eggs, butter, brown sugar, cinnamon, ginger, nutmeg, vanilla extract, and salt until smooth.
  6. Pour the mixture into a baking dish and bake for 25-30 minutes until the top is slightly brown.
  7. Remove from the oven, add marshmallows on top, and broil for about 5 minutes until the marshmallows are golden brown.
  8. Let the casserole set for 10-15 minutes before serving.
