Ingredients

The casserole

  • 5 pounds sweet potatoes, peeled and cut into 1-inch pieces
  • 1 tablespoon salt
  • ½ cup butter, melted
  • 1 cup hot milk
  • 1 tablespoon brown sugar

The topping

  • 10 ounces mini marshmallows

Instructions

  1. 1. Preheat the oven to 450 degrees and adjust the oven rack to the middle position.
  2. 2. In a large pot, add sweet potatoes and salt, then cover with cold water by 1 inch.
  3. 3. Bring to a boil, reduce heat, and simmer until tender, about 20 to 25 minutes. Drain well.
  4. 4. Mash the sweet potatoes in the pot and fold in melted butter.
  5. 5. Stir in hot milk and brown sugar, seasoning with salt to taste.
  6. 6. Spread the mixture in a 9-inch by 13-inch baking dish and top with marshmallows.
  7. 7. Bake until the marshmallows are lightly browned and puffy, about 5 minutes. Serve immediately.
