Ingredients

Sweet Potato Layer

  • 2 ½ pounds sweet potatoes
  • ½ cup maple syrup
  • ¼ cup butter, melted
  • ½ cup almond milk
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon chili powder

Crumble Topping

  • 1 cup pecans
  • 2 tablespoons butter, melted
  • ½ cup rolled oats
  • ¼ cup maple syrup
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon sea salt

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare a casserole dish by spraying it with oil.
  3. Wash and scrub the sweet potatoes and poke holes in them with a fork.
  4. Place the sweet potatoes on a baking sheet and roast for 45 minutes to 1 hour until fork tender.
  5. While the sweet potatoes are baking, mix the crumble ingredients in a bowl and set aside.
  6. Once the sweet potatoes are done, let them cool for about 15 minutes, then peel the skins off.
  7. Add the peeled sweet potatoes and remaining filling ingredients to a food processor and blend until smooth.
  8. Transfer the sweet potato mixture to the casserole dish and spread evenly.
  9. Evenly distribute the crumble topping over the sweet potato layer.
  10. Cover the casserole with foil and bake for 25 minutes.
  11. Remove the foil and bake for an additional 15 minutes.
  12. Serve and enjoy!
