Healthy Sweet Potato Casserole

Instructions
- Preheat the oven to 400°F.
- Prepare a casserole dish by spraying it with oil.
- Wash and scrub the sweet potatoes and poke holes in them with a fork.
- Place the sweet potatoes on a baking sheet and roast for 45 minutes to 1 hour until fork tender.
- While the sweet potatoes are baking, mix the crumble ingredients in a bowl and set aside.
- Once the sweet potatoes are done, let them cool for about 15 minutes, then peel the skins off.
- Add the peeled sweet potatoes and remaining filling ingredients to a food processor and blend until smooth.
- Transfer the sweet potato mixture to the casserole dish and spread evenly.
- Evenly distribute the crumble topping over the sweet potato layer.
- Cover the casserole with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes.
- Serve and enjoy!
