Ingredients

The filling

  • 3 pounds sweet potatoes, peeled and cut into 2-inch pieces
  • ¼ cup unsweetened oat milk
  • 2 tablespoons butter
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon ground nutmeg
  • teaspoon ground cloves
  • ¼ teaspoon ground cinnamon

The topping

  • ½ cup rolled oats
  • ¼ cup fine almond flour
  • 2 tablespoons coconut sugar
  • cup chopped pecans
  • ½ teaspoon kosher salt
  • teaspoon ground nutmeg
  • ¼ cup melted butter or liquid coconut oil

Instructions

  1. Cook the sweet potatoes in boiling water until very soft, about 20-25 minutes.
  2. Preheat the oven to 350°F and prepare a 3-quart baking dish.
  3. Drain the sweet potatoes and return them to the pan or a mixing bowl.
  4. Add oat milk, butter, salt, pepper, nutmeg, cloves, and cinnamon to the sweet potatoes and mash until smooth.
  5. Transfer the mixture to the baking dish and smooth the top.
  6. In a separate bowl, combine oats, almond flour, coconut sugar, pecans, salt, and nutmeg for the topping.
  7. Stir in melted butter until the mixture clumps together, then sprinkle it over the sweet potato mixture.
  8. Bake for 25-30 minutes until the topping is crisp and golden brown.
