Ingredients

  • ½ cup coconut flour
  • 4 large eggs
  • ¼ cup extra-virgin olive oil
  • 2 teaspoons baking powder
  • 4 teaspoons vanilla extract
  • cup maple syrup
  • ¼ teaspoon salt
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 350ºF and prepare two 6-inch cake pans with oil and parchment paper.
  2. In a large bowl, mix the coconut flour, eggs, olive oil, baking powder, vanilla, maple syrup, salt, and water until well combined.
  3. Pour the batter into the prepared pans and bake for 25 minutes, or until golden and firm to touch.
  4. Allow the cake to cool completely before removing it from the pans.
  5. Frost with your favorite topping if desired, and store in the fridge for up to 5 days.
