Ingredients

The base

  • 1 tablespoon olive oil
  • ½ cup finely chopped onion
  • ¾ cup chopped celery
  • 1 cup chopped carrots
  • 1 ½ cups frozen or fresh chopped green beans
  • 3 cloves garlic, finely minced
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper

The liquid

  • 1 can (28-ounces) crushed tomatoes
  • 6 cups chicken or vegetable broth

The protein and pasta

  • 1 can (15-ounces) white beans, rinsed and drained
  • 1 cup small pasta, like shells, ditalini or elbow
  • to taste Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté onion, celery, and carrots until softened.
  2. Add green beans, garlic, basil, salt, oregano, and black pepper, cooking for another minute.
  3. Stir in crushed tomatoes and broth, bringing the mixture to a simmer for 8-10 minutes.
  4. Add beans and pasta, cooking for an additional 10-11 minutes until tender.
  5. Season with more salt and pepper to taste, and serve with Parmesan cheese if desired.
