Instructions
- Preheat the oven to 350°F.
- Spray a standard 12-count muffin tin with cooking spray and set aside.
- In a medium mixing bowl, combine the flour and baking powder, stirring well.
- In a measuring cup, combine the beaten egg, milk, maple syrup, and melted butter, then pour into the dry ingredients and stir until combined.
- Gently fold in the bacon, blueberries, and goat cheese if using.
- Spoon the batter into the muffin tin and bake for 20 minutes.
