Instructions
- 1. Preheat the oven to 350°F and grease a 12-cup muffin pan, lining with paper liners if desired.
- 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- 3. In a large bowl, mix the eggs, maple syrup, coconut milk, melted coconut oil, and vanilla.
- 4. Add the dry ingredients to the wet mixture and combine.
- 5. If using frozen berries, rinse them under cold water until clear to avoid discoloration (optional).
- 6. Fold the berries into the batter and transfer it to the muffin pan.
- 7. Bake for 20 to 25 minutes until a toothpick inserted in the center comes out clean.
- 8. Cool on a rack before serving.
