Ingredients

The crumble topping

  • 2 tablespoons melted butter
  • ¼ cup old-fashioned rolled oats
  • ¼ cup flour
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

The muffins

  • 2 cups flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon coarse salt
  • cup oil
  • ½ cup brown sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • cup milk
  • 1 ½ cups mixed berries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners and cooking spray.
  2. Combine melted butter, oats, flour, brown sugar, and cinnamon in a small bowl.
  3. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, mix oil, brown sugar, and eggs until fluffy, then add vanilla and milk.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then fold in the berries.
  6. Fill muffin wells about ¾ full with batter, top with crumble mixture, and lightly press down.
  7. Bake for 18-22 minutes until set, then cool slightly before removing from the tin.
