Ingredients

The muffins

  • 1 cup all-purpose flour
  • ¼ cup whole wheat flour
  • 1 cup rolled oats
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • ½ tsp salt
  • 1 Tbsp baking powder
  • ¼ tsp cinnamon
  • 1 cup milk
  • ¼ cup cooking oil
  • 2 large eggs
  • 1 cup frozen berries

The oat crumble topping

  • ½ cup rolled oats
  • 2 Tbsp butter, cold
  • 2 Tbsp brown sugar
  • ¼ tsp cinnamon

Instructions

  1. Prepare the oat crumble topping by combining oats, butter, brown sugar, and cinnamon in a bowl and refrigerate.
  2. Preheat the oven to 500ºF.
  3. In a large bowl, mix all-purpose flour, whole wheat flour, rolled oats, brown sugar, white sugar, salt, baking powder, and cinnamon.
  4. In another bowl, whisk together milk, eggs, and oil.
  5. Combine the wet and dry ingredients, stirring just until mixed, then fold in the frozen berries gently.
  6. Line muffin tins with paper liners and fill each cup to the top with muffin batter.
  7. Sprinkle the oat crumble topping over each muffin.
  8. Bake in the oven, reducing the temperature to 400ºF, for 22-25 minutes until golden brown.
  9. Remove muffins from the oven and allow to cool before serving.
