Tri-Berry Muffins

Ingredients

The Muffin Batter

  • C all-purpose flour
  • tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp kosher salt
  • 1 tsp ground cinnamon
  • ¾ C granulated sugar
  • ¾ C milk
  • 1 large egg, lightly beaten
  • 1 stick unsalted butter, melted
  • 1 tsp vanilla extract

The Berries

  • 1 C mixed berries, fresh or frozen

Instructions

  1. Preheat the oven to 375°F and place liners in a muffin tin.
  2. Sift together the flour, baking powder, baking soda, salt, cinnamon, and sugar in a large bowl.
  3. In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed; do not overmix.
  5. Fold in the mixed berries.
  6. Spoon the batter into the muffin cups and bake for 20 to 25 minutes until a tester comes out clean.
