Ingredients

The batter

  • 1 large egg
  • 1 cup unsweetened applesauce
  • cup sugar
  • 1 teaspoon vanilla extract
  • 5 tablespoons light butter, melted
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

The berries

  • 1 ¼ cups fresh mixed berries

Instructions

  1. Preheat the oven to 375°F and prepare a 12-count muffin tin with cooking spray.
  2. In a large bowl, mix the egg, applesauce, sugar, and vanilla until well combined.
  3. Stir in the melted butter.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Combine the dry ingredients with the wet ingredients and mix until a batter forms.
  6. Gently fold in the mixed berries.
  7. Spoon the batter into the prepared muffin tin and bake for 18-20 minutes.
