Ingredients

Wet Ingredients

  • 1 large egg
  • 1 cup unsweetened applesauce
  • cup sugar
  • 1 teaspoon vanilla extract
  • 5 tablespoons light butter, melted
  • 1 cup raspberries

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 4 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 375°F and prepare a 12-count muffin tin with cooking spray.
  2. In a large bowl, mix the egg, applesauce, sugar, and vanilla until combined.
  3. Stir in the melted butter and then add the raspberries gently.
  4. In a separate bowl, combine the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Spoon the batter into the prepared muffin tin and bake for 18-20 minutes.
