Ingredients

The sauce

  • 4 cloves garlic
  • 1 Tbsp olive oil
  • 1 28 oz. can petite diced tomatoes
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp freshly cracked pepper
  • 4 oz. cream cheese

The pasta

  • 19 oz. frozen cheese tortellini

The vegetables

  • 2 cups fresh spinach

The cheese

  • ¼ cup grated Parmesan

Instructions

  1. Mince the garlic and sauté it in olive oil over medium heat until fragrant.
  2. Add the diced tomatoes, basil, oregano, and pepper to the skillet and heat until hot.
  3. Cut the cream cheese into chunks and add it to the skillet, stirring until melted and smooth.
  4. Boil water in a large pot and cook the tortellini according to package instructions, then drain.
  5. Chop the spinach and add it to the sauce, stirring until wilted.
  6. Combine the drained tortellini with the sauce in the skillet.
  7. Sprinkle Parmesan cheese over the top, stir, and adjust seasonings as needed before serving.
