Pasta with Simple Cherry Tomato Sauce

Instructions
- Bring a large pot of water to a boil and toast the pine nuts in a small skillet over low heat.
- In a large skillet, heat olive oil and sauté shallots and garlic with a pinch of salt until soft.
- Once the pasta water is boiling, add salt and cook the pasta until al dente.
- Add crushed red pepper flakes and tomatoes to the skillet, season with salt, and cook until tomatoes break down.
- Add a cup of water to the tomato mixture and bring to a gentle simmer.
- Reserve some pasta cooking liquid, then drain the pasta and add it to the skillet with the sauce.
- Stir in toasted pine nuts, parmesan, and season with salt and pepper.
- Add mozzarella and basil, stir to combine, and serve immediately.
