Pasta with Simple Cherry Tomato Sauce

Ingredients

The pasta

  • 12 ounces orecchiette pasta

The sauce

  • ¼ cup olive oil
  • 1 small shallot, thinly sliced
  • 4 cloves garlic, thinly sliced
  • 1 pound small cherry tomatoes, halved
  • 1/2 cup grated parmesan cheese
  • 4 ounces small mozzarella balls
  • 1/3 cup pine nuts
  • ½ to 1 teaspoon crushed red pepper flakes
  • 1/2 cup fresh basil, thinly sliced
  • to taste kosher salt
  • to taste fresh cracked black pepper

Instructions

  1. Bring a large pot of water to a boil and toast the pine nuts in a small skillet over low heat.
  2. In a large skillet, heat olive oil and sauté shallots and garlic with a pinch of salt until soft.
  3. Once the pasta water is boiling, add salt and cook the pasta until al dente.
  4. Add crushed red pepper flakes and tomatoes to the skillet, season with salt, and cook until tomatoes break down.
  5. Add a cup of water to the tomato mixture and bring to a gentle simmer.
  6. Reserve some pasta cooking liquid, then drain the pasta and add it to the skillet with the sauce.
  7. Stir in toasted pine nuts, parmesan, and season with salt and pepper.
  8. Add mozzarella and basil, stir to combine, and serve immediately.
