Cherry Tomato Pasta

Ingredients

The sauce

  • cup olive oil
  • 1 small onion
  • 2 cloves garlic
  • ½ teaspoon crushed red pepper
  • 22 ounces cherry tomatoes
  • 1 pound spaghetti
  • 2 tablespoons unsalted butter
  • 1 handful basil leaves

Seasoning

  • to taste kosher salt

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add diced onion and a few pinches of salt; cook covered for 7 minutes until softened.
  3. Stir in minced garlic, crushed red pepper, and cherry tomatoes; cover and cook for 5 minutes.
  4. Uncover and cook for an additional 5 to 7 minutes until the sauce thickens.
  5. While the sauce cooks, boil salted water and cook spaghetti until al dente, reserving about ¾ cup of pasta water.
  6. Drain the pasta and add ½ cup of reserved pasta water to the sauce, bringing it to a simmer.
  7. Add the cooked pasta, butter, and toss to combine for about a minute.
  8. Serve topped with Parmesan-Reggiano, crushed red pepper, and fresh basil.
