Ingredients

The pasta

  • 1 lb whole wheat or gluten-free pasta

The sauce

  • 1 tbs olive oil
  • 1 tsp diced garlic
  • 1 pint cherry tomatoes
  • 2 tbs butter
  • 1 cup ricotta
  • 2 tbs snipped fresh basil leaves

Instructions

  1. Cook the pasta according to the package directions.
  2. While the pasta is cooking, heat the olive oil in a skillet and add the garlic, cooking until tender.
  3. Add the cherry tomatoes to the skillet, cover, and cook until a few tomatoes start to crack.
  4. Add the butter to the skillet and melt it with the tomatoes.
  5. Drain the pasta and add it to the skillet along with the ricotta, stirring everything together.
  6. Season with salt and pepper to taste, garnish with basil, and serve.
