Marinated Lentil Salad

Ingredients

Lemon Garlic Dressing

  • 1 lemon lemon
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • ½ Tbsp dried oregano
  • ½ tsp salt
  • to taste freshly cracked pepper

Salad

  • 1 cup dry brown lentils
  • ½ bunch parsley
  • 1 pint grape tomatoes
  • ¼ small red onion
  • 2 oz feta, crumbled

Instructions

  1. Cook the lentils according to package directions, usually boiling for about 20 minutes until tender.
  2. Drain and rinse the lentils with cool water to cool them down.
  3. Prepare the lemon garlic dressing by zesting the lemon and juicing it to measure ¼ cup of juice.
  4. In a bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
  5. Chop the parsley, halve the grape tomatoes, and finely dice the red onion.
  6. In a large bowl, combine the cooled lentils, parsley, tomatoes, onion, feta, lemon zest, and dressing.
  7. Stir to combine and coat the salad with the dressing.
  8. Serve immediately or refrigerate until ready to eat, stirring before serving.
