Instructions
- Cook the lentils according to package directions, usually boiling for about 20 minutes until tender.
- Drain and rinse the lentils with cool water to cool them down.
- Prepare the lemon garlic dressing by zesting the lemon and juicing it to measure ¼ cup of juice.
- In a bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
- Chop the parsley, halve the grape tomatoes, and finely dice the red onion.
- In a large bowl, combine the cooled lentils, parsley, tomatoes, onion, feta, lemon zest, and dressing.
- Stir to combine and coat the salad with the dressing.
- Serve immediately or refrigerate until ready to eat, stirring before serving.
