Ingredients

The pasta and sauce

  • 16 ounces ziti
  • 24 ounces pasta sauce
  • 8 ounces Italian seasoned tomato sauce

The vegetables

  • 1 medium zucchini
  • 1 medium red bell pepper
  • 1 medium red onion
  • 2 cups arugula or spinach (optional)

The protein

  • 8 ounces tempeh
  • 3-4 cloves garlic

The seasonings

  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 tablespoon reduced sodium soy sauce
  • ¼ teaspoon salt
  • teaspoon black pepper

The cheese and garnishes

  • 1 ½ cups shredded mozzarella cheese
  • to taste fresh chopped basil

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9x13 glass baking dish.
  2. Cook the ziti according to package instructions until al dente.
  3. In a large skillet, heat olive oil over medium-high heat, then add zucchini, red bell pepper, red onion, and crumbled tempeh. Sauté for 6-8 minutes until softened.
  4. Stir in minced garlic, tomato sauce, Italian seasoning, soy sauce, and salt. Cover and simmer for 5 minutes, then add arugula or spinach if using.
  5. Combine the cooked ziti with the vegetable and tempeh mixture, then transfer to the prepared baking dish.
  6. Top with shredded mozzarella cheese and bake for 5 minutes until melted. Broil for an additional 1-2 minutes until bubbly and golden.
  7. Let rest for 5 minutes before serving, garnished with fresh basil.
