Instructions
- Preheat the oven to 375°F and lightly grease a 9x13 glass baking dish.
- Cook the ziti according to package instructions until al dente.
- In a large skillet, heat olive oil over medium-high heat, then add zucchini, red bell pepper, red onion, and crumbled tempeh. Sauté for 6-8 minutes until softened.
- Stir in minced garlic, tomato sauce, Italian seasoning, soy sauce, and salt. Cover and simmer for 5 minutes, then add arugula or spinach if using.
- Combine the cooked ziti with the vegetable and tempeh mixture, then transfer to the prepared baking dish.
- Top with shredded mozzarella cheese and bake for 5 minutes until melted. Broil for an additional 1-2 minutes until bubbly and golden.
- Let rest for 5 minutes before serving, garnished with fresh basil.
