Ingredients

The pasta and sauce

  • 8 oz whole wheat pasta
  • 1 large jar marinara sauce

The vegetables

  • 1 tbsp olive oil
  • 1 large onion
  • 1 large zucchini
  • 8 oz button or baby bella mushrooms

The cheese

  • 1 15 oz container fat-free ricotta cheese
  • 1 cup reduced-fat Italian blend cheese or mozzarella

Seasoning

  • to taste salt
  • to taste pepper
  • 1 tbsp chopped parsley (optional)

Cooking spray

  • as needed cooking spray or oil mister

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish with cooking spray.
  2. Heat olive oil in a skillet over medium heat and sauté the onion until softened.
  3. Add zucchini and mushrooms to the skillet and cook until softened and liquid has evaporated.
  4. Combine cooked pasta, marinara sauce, ricotta, salt, and pepper with the sautéed vegetables.
  5. Transfer the mixture to the baking dish and top with cheese.
  6. Bake for 30 minutes and garnish with parsley before serving.
