Instructions
- Preheat the oven to 350°F and prepare a baking dish with cooking spray.
- Heat olive oil in a skillet over medium heat and sauté the onion until softened.
- Add zucchini and mushrooms to the skillet and cook until softened and liquid has evaporated.
- Combine cooked pasta, marinara sauce, ricotta, salt, and pepper with the sautéed vegetables.
- Transfer the mixture to the baking dish and top with cheese.
- Bake for 30 minutes and garnish with parsley before serving.
