Baked Ziti with Spinach

Ingredients

The pasta

  • 12 oz uncooked ziti

The sauce

  • 28 oz crushed tomatoes
  • 1 tsp olive oil
  • 3 cloves garlic, minced
  • 10 oz frozen spinach, thawed
  • 1 tsp oregano
  • 2 tbsp chopped fresh basil
  • to taste kosher salt
  • to taste fresh pepper

The cheese

  • 8 oz fat-free ricotta
  • ¼ cup grated Parmesan cheese
  • 2 cups shredded part skim mozzarella

Other

  • to spray olive oil cooking spray

Instructions

  1. Preheat the oven to 375°F and spray a 9x13-inch baking pan with oil spray.
  2. Cook the pasta in salted water until al dente, then drain and return to the pot.
  3. In a medium saucepan, heat olive oil and sauté the garlic, then add spinach, salt, pepper, and crushed tomatoes. Season with basil and oregano, and cook for 5 minutes.
  4. Combine the sauce with the pasta and mix in half of the mozzarella, Parmesan, and ricotta.
  5. Transfer the pasta mixture to the baking pan and spread evenly. Top with the remaining mozzarella and cover with foil.
  6. Bake for 30 minutes until the mozzarella is melted and edges are lightly browned. Let cool for 5 minutes before serving.
