Ingredients

The pasta

  • 1 pound ziti or other small tubular pasta
  • 1 tablespoon salt

The sauce

  • 3 tablespoons olive oil
  • 3 cloves garlic
  • 1 pound ground Italian sausage
  • 1 28-ounce can crushed tomatoes
  • 1 14.5-ounce can diced tomatoes
  • 1 teaspoon granulated sugar
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ cup freshly grated Parmesan cheese
  • 8 ounces fresh mozzarella cheese (cubed)
  • ½ teaspoon red chili flakes

The topping

  • 8 ounces fresh mozzarella cheese (sliced)
  • ½ cup freshly grated Parmesan cheese
  • to taste fresh parsley (minced)

Instructions

  1. Preheat the oven to 400°F and grease a 9x13 baking dish.
  2. Boil water with salt, add pasta, and cook until al dente, then drain.
  3. In a saucepan, heat olive oil and sauté garlic until browned, then remove garlic.
  4. Add sausage to the pan and cook until starting to brown, then add crushed and diced tomatoes, sugar, basil, oregano, and seasonings, simmering for 10 minutes.
  5. Combine the cooked pasta with the sauce, add cubed mozzarella, Parmesan, and red chili flakes, then mix well.
  6. Transfer the mixture to the baking dish, top with sliced mozzarella and remaining Parmesan.
  7. Bake for about 30 minutes until lightly browned and hot, then garnish with parsley before serving.
