Baked Ziti

Ingredients

The sauce

  • 1 Tbsp olive oil
  • 1 ¾ cup chopped yellow onions
  • 1 lb mild or hot Italian sausage
  • 3 cloves garlic
  • 1 28 oz can crushed tomatoes
  • 1 14.5 oz can petite diced tomatoes
  • 3 Tbsp tomato paste
  • cup chopped fresh basil
  • 4 Tbsp chopped fresh parsley
  • to taste salt and pepper

The ziti

  • 1 15 oz container ricotta cheese
  • 1 large egg
  • 3 ½ cups shredded mozzarella
  • ¾ cup finely shredded parmesan
  • 16 oz dry ziti pasta

Instructions

  1. 1. Preheat the oven to 350°F and boil water for the pasta.
  2. 2. Heat olive oil in a large pan, sauté onions for 2 minutes, then add sausage and cook until browned, adding garlic in the last minute.
  3. 3. Stir in crushed tomatoes, diced tomatoes, tomato paste, basil, parsley, salt, and pepper. Bring to a boil, then simmer for 10 minutes.
  4. 4. Cook the ziti pasta according to package directions, one minute shy of al dente. Reserve ¼ cup pasta water, then drain the pasta.
  5. 5. Return the pasta to the pot, add reserved water and 1 cup of the sauce, and toss to coat.
  6. 6. In a bowl, mix ricotta, egg, parsley, salt, pepper, 1 ½ cups mozzarella, and ½ cup parmesan.
  7. 7. Grease a baking dish, spread 1 ½ cups sauce on the bottom, layer half of the pasta, dollop with ricotta mixture, then top with remaining pasta and sauce.
  8. 8. Sprinkle with remaining mozzarella and parmesan.
  9. 9. Cover with foil and bake for 15 minutes, then uncover and bake for an additional 10-15 minutes until cheese is melted.
  10. 10. Serve warm.
