Instructions
- 1. Preheat the oven to 350°F and boil water for the pasta.
- 2. Heat olive oil in a large pan, sauté onions for 2 minutes, then add sausage and cook until browned, adding garlic in the last minute.
- 3. Stir in crushed tomatoes, diced tomatoes, tomato paste, basil, parsley, salt, and pepper. Bring to a boil, then simmer for 10 minutes.
- 4. Cook the ziti pasta according to package directions, one minute shy of al dente. Reserve ¼ cup pasta water, then drain the pasta.
- 5. Return the pasta to the pot, add reserved water and 1 cup of the sauce, and toss to coat.
- 6. In a bowl, mix ricotta, egg, parsley, salt, pepper, 1 ½ cups mozzarella, and ½ cup parmesan.
- 7. Grease a baking dish, spread 1 ½ cups sauce on the bottom, layer half of the pasta, dollop with ricotta mixture, then top with remaining pasta and sauce.
- 8. Sprinkle with remaining mozzarella and parmesan.
- 9. Cover with foil and bake for 15 minutes, then uncover and bake for an additional 10-15 minutes until cheese is melted.
- 10. Serve warm.
