Ingredients

The base

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, rough chopped
  • 16 ounces mushrooms, sliced
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoon Italian herbs
  • 3–4 ounces baby spinach, chopped
  • 2 cups veggie broth
  • 1 jar marinara sauce (24-25 ounces)
  • 8 ounces dry ziti pasta

The toppings

  • 1 cup ricotta cheese
  • ¼–½ cup finely grated pecorino or parmesan
  • ½–1 cup grated mozzarella cheese
  • to taste fresh basil or Italian parsley
  • to taste chili flakes

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, heat olive oil over medium heat and sauté onion, garlic, and mushrooms with salt, pepper, and Italian herbs until mushrooms are golden brown.
  3. Add spinach and wilt it, then stir in the broth, marinara sauce, and dry pasta. Bring to a simmer.
  4. Dot the mixture with ricotta and sprinkle mozzarella and pecorino on top.
  5. Cover the skillet and bake for 30 minutes.
  6. Uncover and bake for a few more minutes until the cheese is golden. If there's too much liquid, simmer uncovered until it evaporates.
  7. Garnish with fresh herbs and chili flakes before serving.
