Instructions
- Preheat the oven to 400°F.
- In a large skillet, heat olive oil over medium heat and sauté onion, garlic, and mushrooms with salt, pepper, and Italian herbs until mushrooms are golden brown.
- Add spinach and wilt it, then stir in the broth, marinara sauce, and dry pasta. Bring to a simmer.
- Dot the mixture with ricotta and sprinkle mozzarella and pecorino on top.
- Cover the skillet and bake for 30 minutes.
- Uncover and bake for a few more minutes until the cheese is golden. If there's too much liquid, simmer uncovered until it evaporates.
- Garnish with fresh herbs and chili flakes before serving.
