Easy Baked Ziti

Ingredients

The pasta

  • 1 pound ziti pasta

The sauce

  • 4 cups marinara sauce
  • 2 cloves garlic
  • 1 tablespoon lemon zest
  • 1 teaspoon oregano
  • ¼ teaspoon red pepper flakes
  • ¾ teaspoon sea salt
  • 1 pound fresh spinach
  • cups grated smoked mozzarella cheese
  • ¼ cup grated pecorino or Parmesan cheese
  • 1 tablespoon extra-virgin olive oil
  • to taste none freshly ground black pepper

The cheese mixture

  • 2 cups ricotta cheese

For garnish

  • to taste none chopped fresh parsley
  • to taste none torn basil leaves

Instructions

  1. Preheat the oven to 425°F and spread ½ cup of marinara sauce in the bottom of a baking dish.
  2. In a bowl, mix the ricotta cheese with garlic, lemon zest, oregano, red pepper flakes, salt, and pepper.
  3. Cook the pasta in salted boiling water until al dente, then drain.
  4. In the same pot, sauté the spinach in olive oil until wilted, then chop it after squeezing out excess moisture.
  5. Combine the pasta with the remaining marinara, most of the spinach, salt, and pepper.
  6. Layer half of the pasta mixture in the baking dish, add dollops of ricotta, the remaining spinach, and top with the rest of the pasta.
  7. Sprinkle mozzarella and pecorino cheese on top, drizzle with olive oil, and bake until the cheese is golden brown.
  8. Garnish with fresh basil or parsley before serving.
