Instructions
- Preheat the oven to 425°F and spread ½ cup of marinara sauce in the bottom of a baking dish.
- In a bowl, mix the ricotta cheese with garlic, lemon zest, oregano, red pepper flakes, salt, and pepper.
- Cook the pasta in salted boiling water until al dente, then drain.
- In the same pot, sauté the spinach in olive oil until wilted, then chop it after squeezing out excess moisture.
- Combine the pasta with the remaining marinara, most of the spinach, salt, and pepper.
- Layer half of the pasta mixture in the baking dish, add dollops of ricotta, the remaining spinach, and top with the rest of the pasta.
- Sprinkle mozzarella and pecorino cheese on top, drizzle with olive oil, and bake until the cheese is golden brown.
- Garnish with fresh basil or parsley before serving.
