Instructions
- Preheat the grill on high heat for about 15 minutes.
- Cut the eggplants into 3/4" slices and arrange them on a baking sheet.
- Whisk together the lemon juice, oregano, salt, pepper, and minced garlic in a bowl.
- Brush the marinade onto both sides of the eggplant slices just before grilling.
- Place the eggplant slices on the grill without overcrowding.
- Cook for 3 minutes without touching, then check for grill marks.
- If needed, cook for an additional 2-3 minutes for stronger grill marks, then flip the eggplant.
- Cook for another 3-4 minutes until tender, then remove from the grill and serve.
