Grilled Eggplant

Ingredients

The eggplant

  • 2 medium eggplants

The marinade

  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • to taste freshly ground pepper
  • 4 cloves garlic

Instructions

  1. Preheat the grill on high heat for about 15 minutes.
  2. Cut the eggplants into 3/4" slices and arrange them on a baking sheet.
  3. Whisk together the lemon juice, oregano, salt, pepper, and minced garlic in a bowl.
  4. Brush the marinade onto both sides of the eggplant slices just before grilling.
  5. Place the eggplant slices on the grill without overcrowding.
  6. Cook for 3 minutes without touching, then check for grill marks.
  7. If needed, cook for an additional 2-3 minutes for stronger grill marks, then flip the eggplant.
  8. Cook for another 3-4 minutes until tender, then remove from the grill and serve.
