Ingredients

The eggplant

  • 2 medium Eggplant

The seasoning

  • 6 tbsp Olive oil
  • ½ tbsp Italian seasoning
  • ¾ tsp Garlic powder
  • ¾ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Preheat the grill or a cast iron grill pan to medium-high heat.
  2. Slice the eggplant crosswise into ½ inch thick rounds.
  3. In a small bowl, whisk together the olive oil, Italian seasoning, and garlic powder.
  4. Brush half of the oil mixture over one side of the eggplant slices and season with half of the sea salt and black pepper.
  5. Flip the eggplant slices and repeat with the remaining oil mixture, salt, and pepper on the other side.
  6. Place the eggplant slices on the grill or grill pan in a single layer and grill for 3-5 minutes per side until charred and tender.
