Instructions
- Lay the eggplant slices on paper towels and sprinkle with salt; let sit for 30 minutes.
- Heat a grill pan to medium-high heat, then rinse and pat dry the eggplant slices.
- Brush the eggplant with olive oil and season with salt and pepper.
- Grill the eggplant for 4 minutes per side until tender.
- Spread ricotta on the grilled eggplant and top with torn mozzarella; cook until the cheese melts.
- Drizzle with balsamic reduction and top with diced tomatoes and fresh basil before serving warm.
