Grilled Eggplant Bites

Ingredients

  • 1 whole eggplant
  • cup ricotta cheese
  • 1 ounce fresh mozzarella
  • 2 whole plum tomatoes
  • 2 teaspoons balsamic reduction
  • 2 tablespoons fresh basil

Instructions

  1. Lay the eggplant slices on paper towels and sprinkle with salt; let sit for 30 minutes.
  2. Heat a grill pan to medium-high heat, then rinse and pat dry the eggplant slices.
  3. Brush the eggplant with olive oil and season with salt and pepper.
  4. Grill the eggplant for 4 minutes per side until tender.
  5. Spread ricotta on the grilled eggplant and top with torn mozzarella; cook until the cheese melts.
  6. Drizzle with balsamic reduction and top with diced tomatoes and fresh basil before serving warm.
