Ingredients

The eggplant

  • 2 medium eggplants

The seasoning

  • 1 tablespoon sea salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste ground black pepper

The sauce

  • ½ cup barbecue sauce

The oil

  • 1 spray oil (avocado recommended)

The garnish

  • to taste chopped herbs (optional)

Instructions

  1. 1. Place sliced eggplant in a colander and sprinkle with salt, letting it rest for 20 minutes.
  2. 2. Rinse the eggplant thoroughly to remove excess salt and pat dry.
  3. 3. Preheat the grill to high and spray both sides of the eggplant with oil.
  4. 4. Season the eggplant with paprika, garlic powder, onion powder, and pepper.
  5. 5. Grill the eggplant slices for about 3 minutes on each side until char marks appear and they soften.
  6. 6. Brush the eggplant with barbecue sauce and flip to caramelize both sides.
  7. 7. Serve immediately, optionally garnished with chopped herbs.
