Instructions
- 1. Place sliced eggplant in a colander and sprinkle with salt, letting it rest for 20 minutes.
- 2. Rinse the eggplant thoroughly to remove excess salt and pat dry.
- 3. Preheat the grill to high and spray both sides of the eggplant with oil.
- 4. Season the eggplant with paprika, garlic powder, onion powder, and pepper.
- 5. Grill the eggplant slices for about 3 minutes on each side until char marks appear and they soften.
- 6. Brush the eggplant with barbecue sauce and flip to caramelize both sides.
- 7. Serve immediately, optionally garnished with chopped herbs.
