Instructions
- Place chicken in a large pot or saucepan.
- Grind garlic, ginger, herbs, salt, and Maggi together.
- Rub the spice mixture onto the chicken, then add paprika, white pepper, curry, and sliced onions.
- Mix well and marinate in the fridge for about an hour or overnight.
- When ready to cook, add about ¼ cup of water to the chicken and bring to a boil, simmering for 10-15 minutes.
- Preheat the deep fryer to 350°F or heat oil in a saucepan.
- Shake off excess spices from the chicken and deep-fry in batches until golden brown and crispy, about 10-15 minutes.
- Remove chicken and drain on paper towels.
- For plantain fries, cut ends off plantains, slit down the seam, and peel.
- Cut plantains into desired strips.
- Heat oil in a skillet and fry plantains in batches until golden brown, about 5 minutes.
- Drain plantains on paper towels.
