African Grill Chicken (Kati Kati)

bouillon powder (or salt)
The sauce

tomatoes

water (or more as needed)

Instructions
- 1. Trim excess fat from the chicken and pat it dry.
- 2. In a bowl, mix the spices, onion powder, garlic powder, and bouillon.
- 3. Rub the spice mixture onto the chicken pieces.
- 4. Preheat a grill or frying pan and cook the chicken for about 20-30 minutes, turning until browned.
- 5. Blend the tomatoes and set aside.
- 6. In a saucepan, heat palm oil and add the tomato puree, sauté for 4-5 minutes.
- 7. Add the chicken to the saucepan, cover, and simmer for 4-5 minutes, adding water as needed.
- 8. Adjust seasoning, then serve warm with fufu and njama njama.
