African Grill Chicken (Kati Kati)

Ingredients

The chicken

  • 3-4 pounds chicken, skin-on, cut into desired pieces
  • 1 ¼ teaspoon salt
  • 1 tablespoon onion powder
  • 1 ½ tablespoon garlic powder
  • 1 teaspoon white pepper
  • ½ teaspoon cayenne pepper
  • 1 teaspoon bouillon powder (or salt)

The sauce

  • 2 fresh tomatoes
  • ½ cup water (or more as needed)
  • to taste chicken bouillon

Instructions

  1. 1. Trim excess fat from the chicken and pat it dry.
  2. 2. In a bowl, mix the spices, onion powder, garlic powder, and bouillon.
  3. 3. Rub the spice mixture onto the chicken pieces.
  4. 4. Preheat a grill or frying pan and cook the chicken for about 20-30 minutes, turning until browned.
  5. 5. Blend the tomatoes and set aside.
  6. 6. In a saucepan, heat palm oil and add the tomato puree, sauté for 4-5 minutes.
  7. 7. Add the chicken to the saucepan, cover, and simmer for 4-5 minutes, adding water as needed.
  8. 8. Adjust seasoning, then serve warm with fufu and njama njama.
