Ingredients

The spices

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon white pepper
  • ½-1 tablespoon cayenne
  • 4 tablespoons peanut butter
  • 1 tablespoon bouillon
  • 1 teaspoon salt

The chicken

  • 3 pounds skinless chicken thighs

The oil

  • 2-3 tablespoons vegetable oil

The sauce

  • to taste African pepper sauce

Instructions

  1. Soak the skewers in water for at least 20 minutes.
  2. Preheat the oven to 450°F (230°C) and prepare a baking sheet with oil.
  3. Mix the spices and peanut butter in a bowl.
  4. Pat the chicken thighs dry and slice them into thin pieces.
  5. Thread the chicken onto the skewers, about four pieces per skewer.
  6. Brush the chicken with the spice mixture and place on the baking sheet.
  7. Drizzle with oil and bake for about 20 minutes, rotating halfway through.
  8. Switch to broiler setting for the last 3 minutes to crisp the chicken.
  9. Serve warm with African Pepper Sauce.
