Ingredients

The skewers

  • pounds chicken thighs, cut into bite-sized pieces
  • to taste salt
  • to taste black pepper
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame seeds
  • 1 tablespoon green onions, sliced

The sauce

  • ¼ cup soy sauce
  • ½ cup water
  • ¼ cup brown sugar
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon cornstarch (additional)

Instructions

  1. Prepare the sauce by combining soy sauce, water, brown sugar, garlic, ginger, honey, sesame oil, and rice vinegar in a pot over medium-high heat until the sugar dissolves.
  2. Bring the mixture to a boil, then mix cornstarch with cold water and add it to the sauce, boiling until thickened.
  3. Soak bamboo skewers in cold water for 30 minutes.
  4. Thread the chicken pieces onto the soaked skewers and season with salt and pepper, brushing with vegetable oil.
  5. Preheat the grill to medium heat and cook the chicken for 4 minutes per side.
  6. Baste the chicken with the sauce and cook for an additional 2 minutes per side.
  7. Apply more sauce and cook for another minute per side, then sprinkle with sesame seeds and green onions before serving.
