Ultimate Grilled Teriyaki Chicken Skewers

Instructions
- Prepare the teriyaki sauce by whisking cornstarch and water to form a slurry.
- Heat a saucepan over medium heat and add the slurry along with brown sugar, soy sauce, garlic, rice vinegar, ginger, honey, and sesame oil.
- Bring the sauce to a simmer and whisk until it thickens, then remove from heat and cool.
- Cut the chicken into 1" cubes and place in a bowl, adding half of the cooled sauce to coat the chicken.
- Marinate the chicken for at least 30 minutes or up to overnight in the fridge.
- Preheat the grill to 350°F.
- Thread the marinated chicken onto skewers and grill for 20-30 minutes, rotating every 3-4 minutes.
- Baste the chicken with the remaining teriyaki sauce at the 15-minute mark.
- Once cooked through, remove from the grill and garnish with chives and sesame seeds before serving.
