Ultimate Grilled Teriyaki Chicken Skewers

Ingredients

The teriyaki sauce

  • 3 Tablespoons Corn Starch
  • 1 ½ Cups Water
  • Cup Brown Sugar or Coconut Sugar
  • ½ Cup Soy Sauce
  • 4 Cloves Garlic (minced)
  • 2 Tablespoons Rice Vinegar
  • 1 Tablespoon Ground Ginger
  • 2 Tablespoons Honey
  • 1 Tablespoon Sesame Oil

The chicken skewers

  • 3 Pounds Chicken Thighs (cut into 1" cubes)

For garnishing

  • 1 Bunch Chives (chopped)
  • 2 Tablespoons Sesame Seeds

Instructions

  1. Prepare the teriyaki sauce by whisking cornstarch and water to form a slurry.
  2. Heat a saucepan over medium heat and add the slurry along with brown sugar, soy sauce, garlic, rice vinegar, ginger, honey, and sesame oil.
  3. Bring the sauce to a simmer and whisk until it thickens, then remove from heat and cool.
  4. Cut the chicken into 1" cubes and place in a bowl, adding half of the cooled sauce to coat the chicken.
  5. Marinate the chicken for at least 30 minutes or up to overnight in the fridge.
  6. Preheat the grill to 350°F.
  7. Thread the marinated chicken onto skewers and grill for 20-30 minutes, rotating every 3-4 minutes.
  8. Baste the chicken with the remaining teriyaki sauce at the 15-minute mark.
  9. Once cooked through, remove from the grill and garnish with chives and sesame seeds before serving.
