Instructions
- Heat 1 Tbsp. vegetable oil in a skillet and cook the tofu until golden brown on both sides.
- In the same skillet, add the remaining vegetable oil and sauté shallots, serrano chile, ginger, garlic, and tomato paste until the mixture is deep brick red.
- Stir in the flour and spices, then add water and cook until fragrant.
- Return the tofu to the pan, add salt and water, and simmer until the sauce thickens.
- Add the peas, cherry tomatoes, and butter, cooking until warmed through.
- Stir in lemon juice and season with salt as needed. Serve topped with cilantro and rice.
