Tofu and Green Pea Curry

Ingredients

  • 4 Tbsp. vegetable oil
  • 1 16-oz. block extra-firm tofu
  • 3 tsp. kosher salt
  • 3 large shallots
  • 1 large serrano chile
  • 1 1-inch piece ginger
  • 5 cloves garlic
  • ¼ cup double-concentrated tomato paste
  • 2 tsp. all-purpose flour
  • 2 tsp. cumin seeds
  • 1 Tbsp. ground coriander
  • 1 Tbsp. paprika
  • 2 tsp. mild curry powder
  • 1 tsp. organic sugar
  • 1 cup green peas
  • ½ cup cherry tomatoes
  • 2 Tbsp. unsalted butter
  • 2 tsp. fresh lemon juice
  • to taste chopped cilantro
  • to serve steamed rice

Instructions

  1. Heat 1 Tbsp. vegetable oil in a skillet and cook the tofu until golden brown on both sides.
  2. In the same skillet, add the remaining vegetable oil and sauté shallots, serrano chile, ginger, garlic, and tomato paste until the mixture is deep brick red.
  3. Stir in the flour and spices, then add water and cook until fragrant.
  4. Return the tofu to the pan, add salt and water, and simmer until the sauce thickens.
  5. Add the peas, cherry tomatoes, and butter, cooking until warmed through.
  6. Stir in lemon juice and season with salt as needed. Serve topped with cilantro and rice.
