Instructions
- Preheat the oven to 400°F.
- Combine tomatoes, onion, garlic, olive oil, salt, pepper, red pepper flakes, and basil in a large pan and roast for 30 minutes until golden.
- Blend the roasted ingredients with coconut milk, vegetable stock, and cheese until smooth.
- Serve with additional fresh basil if desired.
