Creamy No-Cream Tomato Soup

Instructions
- Chop the onion and mash the garlic.
- Clean and chunk the tomatoes.
- Heat olive oil in a large pot over medium-high heat.
- Sauté the onion for about 6 minutes until soft.
- Add garlic and sauté for another minute.
- Add tomatoes, basil, Italian seasoning, chicken broth, half of the coconut cream, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for about 20 minutes.
- Blend 3/4 of the soup mixture until smooth and return it to the pot.
- Adjust seasoning as needed.
- For the drizzle, whisk together the remaining coconut cream, water, and lemon juice.
- Serve the soup with the drizzle on top and garnish as desired.
