Creamy No-Cream Tomato Soup

Ingredients

The soup

  • 3 tablespoons olive oil
  • 1 large onion
  • 3 pounds tomatoes
  • 6 cloves garlic
  • ½ cup fresh basil
  • 1 teaspoon Italian seasoning
  • cups chicken broth
  • 1 13 oz can coconut cream
  • 2 teaspoons salt
  • 1 teaspoon pepper

The drizzle

  • 1 teaspoon lemon juice
  • 1 teaspoon water

Instructions

  1. Chop the onion and mash the garlic.
  2. Clean and chunk the tomatoes.
  3. Heat olive oil in a large pot over medium-high heat.
  4. Sauté the onion for about 6 minutes until soft.
  5. Add garlic and sauté for another minute.
  6. Add tomatoes, basil, Italian seasoning, chicken broth, half of the coconut cream, salt, and pepper.
  7. Bring to a boil, then reduce heat to low and simmer for about 20 minutes.
  8. Blend 3/4 of the soup mixture until smooth and return it to the pot.
  9. Adjust seasoning as needed.
  10. For the drizzle, whisk together the remaining coconut cream, water, and lemon juice.
  11. Serve the soup with the drizzle on top and garnish as desired.
