Classic Tomato Soup

Ingredients

The soup

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 large white onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons all-purpose flour
  • 3 cups low-sodium chicken broth
  • 28 oz canned whole tomatoes
  • 1 ½ teaspoons caster sugar
  • 1 sprig fresh thyme
  • to taste salt
  • to taste ground black pepper

For serving

  • 3 tablespoons fresh chives and dill, finely chopped
  • ½ cup Crème fraîche

Instructions

  1. Heat the butter and olive oil in a large pot over medium heat until the butter melts.
  2. Add the chopped onion and garlic, and sauté for 5 to 8 minutes until the onion is soft and translucent.
  3. Coat the onion and garlic with all-purpose flour, then add the chicken broth, canned tomatoes, sugar, and thyme.
  4. Season the soup with salt and pepper, then bring it to a simmer over medium heat while stirring constantly.
  5. Cover the pot, reduce the heat to medium-low, and simmer for 20 minutes.
  6. Turn off the heat, discard the thyme, and purée the soup until creamy and smooth.
  7. Mix the crème fraîche with chopped chives and dill, and serve with a teaspoon of the mixture on each bowl of soup.
