Classic Tomato Soup

Instructions
- Heat the butter and olive oil in a large pot over medium heat until the butter melts.
- Add the chopped onion and garlic, and sauté for 5 to 8 minutes until the onion is soft and translucent.
- Coat the onion and garlic with all-purpose flour, then add the chicken broth, canned tomatoes, sugar, and thyme.
- Season the soup with salt and pepper, then bring it to a simmer over medium heat while stirring constantly.
- Cover the pot, reduce the heat to medium-low, and simmer for 20 minutes.
- Turn off the heat, discard the thyme, and purée the soup until creamy and smooth.
- Mix the crème fraîche with chopped chives and dill, and serve with a teaspoon of the mixture on each bowl of soup.
