Ingredients

  • 1 tablespoon butter
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • a pinch red pepper flakes (optional)
  • 1 14-ounce can canned tomatoes (whole, cubed, or crushed)
  • ¾ cup chicken broth or water
  • 3 tablespoons heavy cream
  • to taste salt
  • to taste pepper

Instructions

  1. Melt butter in a medium saucepan over medium heat and cook onions until softened.
  2. Add garlic and red pepper flakes, cooking until golden and aromatic.
  3. Add canned tomatoes and broth/water; bring to a simmer and cook for about 15 minutes.
  4. Blend the soup until smooth using an immersion or countertop blender.
  5. Stir in heavy cream and adjust thickness with more broth or water if needed. Season with salt and pepper to taste.
