Easy Tomato Soup

Ingredients

  • 4 tbs butter
  • 1 cup onion, diced
  • 1 clove garlic, pureed
  • cup white whole wheat flour
  • 5 cups broth
  • 15 oz canned diced tomatoes
  • 15 oz canned tomato sauce
  • 1 tsp honey or maple syrup
  • 2 sprigs fresh basil
  • 1 leaf bay leaf
  • 1 cup whole milk
  • 1 tsp salt or to taste

Instructions

  1. Melt the butter in a soup pot and sauté the onion for about 5 minutes until soft.
  2. Lower the heat and add the garlic, cooking for another minute.
  3. Add the flour and 1 cup of broth, whisking for a minute.
  4. Stir in the remaining broth, tomatoes, tomato sauce, honey, basil, bay leaf, and salt.
  5. Bring to a boil, then lower the heat and simmer for 30 to 40 minutes.
  6. Remove the basil and puree the soup with an immersion blender.
  7. Stir in the milk and serve warm.
