Ingredients

The soup base

  • 1 cup chopped onion
  • 3 large carrots, diced
  • 2 cloves garlic, minced
  • 1 15oz can light coconut milk
  • 2 ¾ cups unsweetened almond milk
  • 1 15oz can diced tomatoes
  • 1 cup red lentils
  • ½ cup dry quinoa

The spices

  • 1 tbsp curry powder
  • 2 tsp garam masala
  • 1 tsp coriander
  • ½ tsp salt

Instructions

  1. Sauté onions and carrots in oil over medium heat for about 10 minutes, stirring often.
  2. Add garlic and cook for an additional couple of minutes.
  3. Combine the remaining ingredients and stir well.
  4. Increase heat to high until soup boils, then reduce to low and simmer covered for about 20 minutes.
  5. Remove the lid and stir, then cook uncovered on low for another 10 minutes to meld flavors.
