Curried Quinoa Red Lentil Soup

The soup base

Instructions
- Sauté onions and carrots in oil over medium heat for about 10 minutes, stirring often.
- Add garlic and cook for an additional couple of minutes.
- Combine the remaining ingredients and stir well.
- Increase heat to high until soup boils, then reduce to low and simmer covered for about 20 minutes.
- Remove the lid and stir, then cook uncovered on low for another 10 minutes to meld flavors.
