Ingredients

The Muffin Batter

  • 1 large egg
  • 1 cup unsweetened applesauce
  • cup sugar
  • 1 teaspoon vanilla extract
  • 5 tablespoons light butter, melted
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

The Fruit Mixture

  • ¾ cup diced strawberries
  • ½ cup diced rhubarb
  • 1 teaspoon lemon juice
  • 2 teaspoons powdered sugar

Instructions

  1. Preheat the oven to 375 degrees and prepare a muffin tin with cooking spray.
  2. In a bowl, combine strawberries, rhubarb, lemon juice, and powdered sugar.
  3. In a large mixing bowl, mix the egg, applesauce, sugar, and vanilla until combined.
  4. Stir in the melted butter until well mixed.
  5. In another bowl, combine flour, baking soda, baking powder, and salt.
  6. Add the dry ingredients to the wet mixture and stir until just combined.
  7. Fold in the strawberry rhubarb mixture.
  8. Spoon the batter into the muffin tin and bake for 18-20 minutes.
