The Fruit Mixture

Instructions
- Preheat the oven to 375 degrees and prepare a muffin tin with cooking spray.
- In a bowl, combine strawberries, rhubarb, lemon juice, and powdered sugar.
- In a large mixing bowl, mix the egg, applesauce, sugar, and vanilla until combined.
- Stir in the melted butter until well mixed.
- In another bowl, combine flour, baking soda, baking powder, and salt.
- Add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the strawberry rhubarb mixture.
- Spoon the batter into the muffin tin and bake for 18-20 minutes.
