Ingredients

The cake

  • 3 cups blanched almond flour
  • 1 teaspoon celtic sea salt
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 5 large eggs
  • ½ cup agave nectar or honey
  • ¼ cup grapeseed oil or palm shortening

Add-ins

  • 3 cups carrots, grated
  • 1 cup raisins
  • 1 cup walnuts

Instructions

  1. 1. Combine almond flour, salt, baking soda, cinnamon, and nutmeg in a large bowl.
  2. 2. In a separate bowl, mix together eggs, agave, and oil.
  3. 3. Stir in grated carrots, raisins, and walnuts into the wet ingredients.
  4. 4. Combine the wet ingredients with the dry ingredients.
  5. 5. Transfer the batter into 2 well-greased 9-inch springform pans.
  6. 6. Bake at 325°F for 35 minutes.
  7. 7. Cool the cake for 3 hours, then remove from the pan.
  8. 8. Serve.
