Ingredients

The cake

  • 2 tbsp butter, melted
  • 2 cups almond flour
  • ¼ cup ground flaxseed
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ¾ tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp fine sea salt
  • cup pure maple syrup
  • 2 units eggs
  • 1 tsp vanilla extract
  • 1 cup shredded carrot
  • cup raisins

The frosting

  • 1 batch healthy cream cheese frosting

For topping

  • 1 handful chopped toasted pecans or walnuts

Instructions

  1. Preheat the oven to 350°F and line an 8x8 inch baking dish with parchment paper.
  2. Whisk together almond flour, flaxseed, baking soda, cinnamon, ginger, nutmeg, and salt in a mixing bowl.
  3. Add maple syrup, eggs, vanilla, and melted butter to the dry ingredients and mix well.
  4. Fold in the shredded carrots and raisins.
  5. Spoon the thick batter into the prepared baking dish and bake for 28-30 minutes until a knife comes out clean.
  6. Let the cake cool completely before spreading the frosting on top and topping with chopped nuts.
