Instructions
- Preheat the oven to 350ºF and prepare a 9x9-inch pan with coconut oil spray.
- Grate the carrots and squeeze out excess moisture using paper towels.
- In a large bowl, combine the grated carrots with all dry ingredients.
- In a separate medium bowl, mix the wet ingredients except for the coconut oil.
- Combine the wet and dry ingredients, then add the melted coconut oil and mix again.
- Pour the batter into the prepared pan and bake for 25-30 minutes.
- Allow the cake to cool for at least an hour before frosting.
- For the frosting, mix all frosting ingredients until smooth.
- Frost the cooled cake and enjoy.
