Ingredients

Dry Ingredients

  • 3-4 large carrots, peeled and grated
  • ¾ cup white whole wheat flour
  • ¾ cup all-purpose flour
  • ½ cup light brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • teaspoon salt
  • cup chopped pecans
  • cup raisins

Wet Ingredients

  • cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 2 tablespoons melted coconut oil

Cream Cheese Frosting

  • ½ cup fat-free cream cheese
  • ½ cup nonfat Greek yogurt
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 350ºF and prepare a 9x9-inch pan with coconut oil spray.
  2. Grate the carrots and squeeze out excess moisture using paper towels.
  3. In a large bowl, combine the grated carrots with all dry ingredients.
  4. In a separate medium bowl, mix the wet ingredients except for the coconut oil.
  5. Combine the wet and dry ingredients, then add the melted coconut oil and mix again.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes.
  7. Allow the cake to cool for at least an hour before frosting.
  8. For the frosting, mix all frosting ingredients until smooth.
  9. Frost the cooled cake and enjoy.
