Instructions
- Preheat the oven to 350°F and grease a 9-inch pan or two 6-inch pans.
- In a bowl, combine coconut flour, maple syrup, coconut oil, eggs, cinnamon, ginger, nutmeg, salt, lemon juice, and baking soda, whisking until smooth.
- Stir in shredded carrots, pineapple, and raisins if using.
- Pour the batter into the prepared pan(s) and bake for 40 to 50 minutes until the center is firm.
- Allow the cake to cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
