Ingredients

The cake

  • cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon sea salt
  • 2 large eggs
  • ½ cup applesauce
  • ½ cup maple syrup
  • ½ cup almond milk
  • ½ cup melted coconut oil
  • 2 teaspoons vanilla extract
  • 2 cups finely grated carrots

The frosting

  • 4 ounces cream cheese
  • tablespoons butter
  • 2 cups powdered sugar
  • teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease the baking pan.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a separate bowl, whisk the eggs and then mix in the wet ingredients including the grated carrots.
  4. Combine the wet and dry mixtures and stir until just combined.
  5. Pour the batter into the prepared baking pan and bake for 35 to 38 minutes.
  6. Let the cake cool completely before frosting.
  7. For the frosting, beat the cream cheese and butter until smooth, then mix in the powdered sugar and vanilla.
