Vegan Cauliflower Sweet Potato Tacos

Ingredients

  • 1 small onion, diced
  • 2 to 2½ cups peeled, cubed sweet potato
  • 2 cups bite-sized cauliflower florets
  • 2 cloves garlic, minced
  • 1 15-ounce can black beans, rinsed and well-drained
  • 1 4-ounce can roasted green chiles, drained
  • 2 Tbsp. Primal Kitchen Avocado Oil (or other cooking fat of choice)
  • 1 tsp. taco seasoning
  • ½ tsp. salt
  • Juice of 1 lime
  • 10 pieces corn tortillas
  • ½ cup Primal Kitchen Vegan Ranch Dressing (or ranch dressing of choice)
  • 1 Tbsp. chipotle pepper in adobo sauce
  • ¼–½ tsp. chipotle pepper powder
  • to taste Fresh cilantro, diced avocado and lime wedges for serving

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, mix oil, lime juice, taco seasoning, and salt.
  3. Place onion and sweet potato on the baking sheet, drizzle half of the oil mixture, and toss to coat.
  4. Bake for 12 minutes, then add cauliflower, garlic, green chiles, and the remaining oil mixture. Toss and return to the oven.
  5. Bake for another 15 minutes until the cauliflower is tender. Stir in black beans and bake for an additional 5-7 minutes.
  6. Mix the Vegan Ranch Dressing with chipotle pepper powder.
  7. Prepare cilantro, lime wedges, and avocado for serving.
  8. Serve the filling in warm corn tortillas with the sauce and toppings.
