Vegan Cauliflower Sweet Potato Tacos

Primal Kitchen Vegan Ranch Dressing (or ranch dressing of choice)

Fresh cilantro, diced avocado and lime wedges for serving
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a bowl, mix oil, lime juice, taco seasoning, and salt.
- Place onion and sweet potato on the baking sheet, drizzle half of the oil mixture, and toss to coat.
- Bake for 12 minutes, then add cauliflower, garlic, green chiles, and the remaining oil mixture. Toss and return to the oven.
- Bake for another 15 minutes until the cauliflower is tender. Stir in black beans and bake for an additional 5-7 minutes.
- Mix the Vegan Ranch Dressing with chipotle pepper powder.
- Prepare cilantro, lime wedges, and avocado for serving.
- Serve the filling in warm corn tortillas with the sauce and toppings.
